tresia's bangin' meatloaf
this recipe is good for 8 normal people or 4 "mcfeedme" people
2 pounds of ground beef
4 or 5 strips of bacon
1 large egg
1 large onion, chopped small
2 cloves of garlic, chopped small
1 green pepper, chopped small
3 stalks of celery, chopped small
1 cup of breadcrumbs
1 teaspoon of kosher salt
1 teaspoon of black pepper
1 teaspoon dried thyme leaves
1 teaspoon of fresh, chopped parsley or dried
¼ cup of vegetable or canola oil
1 teaspoon of brown sugar
2 tablespoons of mustard
⅓ cup of ketchup
Preheat oven to 350 degrees. Place your onions, garlic, celery and green pepper on a cookie sheet. Pour the vegetable or canola oil over the vegetables, add a pinch of salt and pepper and mix everything together making sure the oil and seasonings are evenly distributed. Cook in the oven for 10/15 minutes or until the vegetables are lightly browned. Take out of the oven and set aside to let cool.
In a large bowl combine the beef, egg, breadcrumbs, roasted vegetables, thyme leaves, parsley, salt and pepper WELL. Place in either a lightly greased loaf pan or shape into a loaf and place in a lightly greased baking dish.
In a separate bowl, mix together the brown sugar, mustard and ketchup and pour on top of the meatloaf.
Take uncooked strips of bacon and cover the top of the meatloaf if using a loaf pan or if using a baking dish, cover the top of the meatloaf by tucking the ends of the bacon underneath.
Bake at 350 degrees for one hour
